Dark Beer Pork Demi Glace
makes approx 10 oz.
1 tbsp. olive oil
1 tbsp. diced shallots
1/4 cup white wine
1/4 cup dark beer
8 oz. Glace de Veau Roasted Veal Stock Reduction
1 tbsp. heavy whipping cream
1 tsp. dark beer
1 tbsp. stone ground mustard
SWEAT shallots in olive oil in a saucepan. Add wine and ¼ cup beer; reduce by 70%.
STIR in Glace de Veau Roasted Veal Stock Reduction; bring to a simmer. Stir in heavy whipping cream, 1 tsp. beer and mustard.
