Raspberry Chipotle Demi Glace Recipe
makes approx 8 oz.

6 oz. Glace de Veau Roasted Veal Stock Reduction
2 oz. raspberry jam
1 oz. diced chipotle chiles
Salt and pepper, to taste

HEAT Glace de Veau Roasted Vealraspberry jam and chiles in a saucepan; bring to a boil. Season to taste with salt and pepper.
